Santa Oliva is a limited edition labour of love. A grand cru made from the Cerasuola olives harvested from a macro-site where the terroir seems to really amplify the organoleptic nuances of this olive cultivar. Driven and intense it features notes of rocket, misticanza salad, green tomato, celery leaf and cavolo nero. It has a wonderful bitterness at the finish full of spicy rocket and green pepper.
