Tomato and Pomegranate Salad

This is the perfect salad for when the tomatoes still have some flavour and the pomegranates are coming in to their own. It is an autumn delight and the perfect combination of savoury, sharpness and sweetness. It works amazingly alongside simply grilled protein.

INGREDIENTS

400g cherry tomatoes (datterini or ciliegia out of choice), diced

400g larger vine or plum tomatoes, diced

Seeds of 1 large pomegranate

1 small red onion finely chopped

1 garlic clove, grated

1/2 tsp ground allspice

3 tbsp Extra Virgin Olive Oil – we love this with Carolea from the incredible Librandi family in Calabria. This precise, delicate oil allows the ingredients to sing

2 tsp Apple Cider Vinegar

1 1/2 tbsp Pomegranate Molasses

Oregano leaves and Flat Leaf Parsley leaves

Flaked Sea Salt

METHOD
Mix together the tomatoes and the onion in a bowl and set aside.
Then in a smaller bowl, combine the garlic, allspice, vinegar, molasses, olive oil and half a teaspoon of flaked salt. Then pour over the tomatoes and mix well.
Arrange the tomatoes along with juices on a large plate. Sprinkle over the pomegranate seeds liberally and then follow this with the oregano and parsley. To finish, add a final swirl of Extra Virgin Olive Oil and serve.
