Gremolata with Asparagus and Extra Virgin Olive Oil
Gremolata is a great finishing touch for a simply grilled piece of fish or meat and also works well over grilled or roasted vegetables.
Super fast to prepare, it’s base ingredient is flat leaf parsley but we like to make it really lively with additional lemon and a decisive Extra Virgin Olive Oil to give it some backbone.
A large bunch of Flat leaf Parsley
5 leaves of fresh mint
5 leaves of fresh basil
1 clove garlic, finely grated or crushed
Zest of 1 lemon
Maldon salt
You can include sliced almonds or chopped pistachio nuts if you want a bit more bite
Chop everything finely and combine. Then add the olive oil and season to taste.
